
Potassium
metabisulfite, K2S2O5, is a white crystalline powder or white granules with
a pungent sulfur odour. The main use for the chemical is as an antioxidant
or chemical sterilant
Potassium bisulfite belongs to the sulfite group of preservatives. Sulfites
are characterized by containing sulfur and oxygen. Potassium bisulfite is
also referred to as potassium metabisulfite or potassium metabisulfite powder. This preservative is found
naturally in wine. Known as an antioxidant preservative, potassium bisulfite
has some antioxidant capabilities,meaning it can fight inflammation causing
free radicals in the body.

Potassium metabisulfite powder has been used as an anti-caking, firming and glazing agent,
Potassium bisulfite also is added to dried apples and dehydrated potatoes to
preserve their edibility. Potassium bisulfite also is added to wine, not
only as a preservative, but also to reduce wine browning and promote
clarity. It is a food preservative, which preserves the natural color of
food and protects food against bacteria.

The
winemaking industry uses potassium metabisulfite as an additive during the
bottling process. Potassium Meabisulphite is a strong antioxidant that
protects the color and flavors of the wine. Without the use of potassium
metabisulfite, wines would develop a stronger taste over time as the wine
ages in the bottle. One quarter teaspoon of potassium metabisulphite can
treat approximately five gallons of wine.
